Today we were out visiting the beautiful model at Foxfield Meadows by Hearndon Construction in Suffolk.
Brie and Fig Crostini
Super simple appetizer, great for any party or get together or for just a light meal alongside your favorite beverage.
1 baguette, sliced
olive oil or butter
1 wheel brie cheese
1 jar fig preserves, store bought or homemade, see recipe below.
Brush top of baguette slices with butter or olive oil and toast in a 375 degree oven for 5-8 minutes. Top each bread toast with a slice of brie and a dollop of fig preserves. Serve and enjoy!
Fig Preserves
2 lbs fresh figs, stemmed and quartered
1 lemon, juiced
1/2 cup honey
3/4 cup sugar
In saucepan combine all ingredients in sauce pan over medium-high heat. Bring to a boil, then reduce to a simmer and cook for about an hour until thickened. Can leave jam chunky or puree to desired consistency. Store in the fridge for up to 3 weeks.
